What distinguishes pecel rice from one area to another is the flavor of the peanuts sauce. For example, in the Tulung Agung the ingredient of peanut sauce is mixed with an herb called kaempferia galanga. Meanwhile in the Kediri area, peanut sauce is not given kaempferia galanga. But in general the ingredients of this peanut sauce are peanuts, sugar, salt, sugar, chilli, and citrus leaves. The materials are then ground into one, and later into a coarse yet soft texture. And to be served with pecel rice, the remaining solid
paenut sauce seasonings must be melted down in hot water. And it becomes a thick peanut sauce with a spicy and savory taste.
If eat pecel rice, it's not complete if you don't have peyek. The peyek itself is made of flour and then deep-fried and crispy. Peyek has a savory taste, usually it is mixed with small shrimps, or may also be mixed with peanuts as a topping. In ancient times, peyek was also mixed with moth. Wich are insects that usually appear in the rainy season. The moth itself is an adult form of termites that eat wood. But nowadays the use of moth as a mixture for peyek is rare. Because the moth is difficult to find, and interest from the moth
peyek is low.
Pecel rice is one of the most healthful traditional dishes on the table. Because rice is served with several vegetables in its presentation. Such as bean sprouts, long nuts, cassava leaves, and boiled spinach.
But the variety of vegetables used may vary beyond the one mentioned, adjusting the natural results to every region. Traditionally, pecel rice is served with a stick plate called 'ingke'. And also 'pincuk', which is a
banana leaf that is shaped to taper down as a container for pecel rice.
In some areas this pecel rice presentation is varied. For example, pecel sauce mixed with tumpang sauce. And usually this food is called 'tumpang pecel'. Tumpang itself is a spicy sauce that is made using rotting fermented soybean cake as a mixture. Making this tumpang sauce has a distinctive smell. Even so, there are many fans of this tumpang sauce, no less than the pecel sauce. Therefore, 'tumpang pecel' is created as a combination of sauces that are liked and fits the people's tongue.
Etymologically in Javanese. Pecel is defined as "crushed" or crushed by pounding. Pecel sauce itself is almost similar to gado-gado sauce. What distinguishes it is the texture of the seasonings and the mixed ingredients used. Pecel rice can actually be found abroad, such as the Philippines, Malaysia, Thailand, and Suriname. But it has a different taste because it uses different types of nuts.
